Add these Asian style beef lettuce wraps to your list of quick and easy springtime meals.

This is one of the few meals I love so much that I double the recipe so there’s leftovers.

 

It’s simple to make with ingredients you likely have in your pantry and your family will absolutely love it!

FOR THE SAUCE

 

¼ cup maple syrup, brown sugar or coconut sugar

 

¼ cup coconut aminos, tamari or soy sauce

 

2 tsp rice vinegar

 

1 tbsp toasted sesame oil

 

2 tsp cornstarch

 

Red pepper flakes (optional)

 


 

GROUND BEEF FILLING

 

1 tbsp olive oil

 

1 pound ground beef

 

2 clove garlic

 

2 tsp grated fresh ginger

 

1 medium bell pepper

 

½ cup shredded carrot

 


Green onion

 

Salt and pepper to taste

 

Garnish with sesame seeds

 

Bibb lettuce

 

Steamed rice or cauliflower rice

 


HOW TO MAKE IT


Make sauce by whisking together all ingredients.

 

Brown ground beef; add garlic and ginger and cook for one to two more minutes.


Add bell pepper and carrot and cook until tender, about three to four minutes.


Pour sauce over meet mixture and cook until combined and warmed thoroughly. 

 

Add cauliflower rice or steamed white rice mixture or serve as a side.

 

Top with green onion and sesame seeds.
