I’ve been on the hunt for tasty bowls, so when I stumbled on one with sloppy joes, I was excited.
Call me simple, but I love Manwich; have since I was a kid.
But I haven’t bought a can of the sloppy joe mix in years – until I decided to make it in a bowl.
You’ll find tons of variations of the sloppy joe bowl online, but this is the one I settled on (with a couple of my own adjustments).
It was delish!
WHAT YOU NEED
1 lb. lean ground beef
1 can Manwich
Sweet potatoes (I bought them already cubed)
Coleslaw (I bought the chopped coleslaw kit from HEB)
Pickles
LET’S MAKE A BOWL
STEP 1: Make coleslaw according to directions and refrigerate.
STEP 2: Place cubed sweet potatoes on baking sheet lined with tin foil and lightly sprayed with olive oil.
Season with salt and pepper and roast in oven at 425 degrees for about 20 minutes. I like mine extra crunchy so I cranked it up to 450 degrees for a few extra minutes.
STEP 3: Cook ground beef in skillet and add Manwich (or use your own recipe if you like to complicate things).
Let simmer until thoroughly heated and bubbly.
STEP 4: Assemble bowls with a little of everything; a scoop of sweet potatoes, coleslaw and sloppy joe mix.
Top with a few pickles (I like Famous Dave’s Zesty Dill Pickle Chips).
