Broccoli taco bowl: Watching your weight doesn’t mean you can’t enjoy the taste of tacos.
This recipe for broccoli taco bowl is healthy, affordable and easy to make.

WHAT’S IN IT
5 ounces lean ground hamburger
1-oz shredded cheddar cheese
1¼ cup broccoli, cut into bite sized pieces
¼ cup Rotel tomatoes
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon salt
pinch of red pepper flakes
2 tablespoons low sodium chicken stock
HOW TO MAKE IT
Put broccoli and chicken stock in bowl, cover with plastic wrap and microwave for 4 minutes or until tender and cooked.
Meanwhile, brown hamburger and drain the grease.
Add Rotel, garlic powder, onion powder, salt, and red pepper flakes and stir well.
When broccoli is finished cooking, add it to skillet and toss with the hamburger mixture.
Put everything into a bowl and top with shredded cheddar cheese.

1 ½ cups English cucumber, chopped
1 tbsp capers
2 tbsp chives, chopped
2 tbsp cilantro, chopped
2 tbsp parsley, chopped
1 tsp garlic, minced
½ tsp lime juice
1 ½ oz avocado, chopped
1 tsp olive oil
Start with cold ingredients, combine, toss gently to evenly coat and serve immediately.
