Comfort food with a twist: Let’s make a lemony chicken and rice bake.

WHAT YOU NEED
2 tsp. olive or avocado oil
1 lb. boneless chicken thighs
1 ½ tsp salt
½ tsp black pepper
2 tsp smoked paprika
2 tsp Italian seasoning
½ yellow onion, chopped
3 garlic cloves, minced
1 cup of white rice
1 lemon, juiced
1 cup chicken broth
½ of 15 oz can full-fat coconut milk
2 cups chopped kale
1 ½ cups water (or as needed)
⅓ cup fresh chopped parsley
HOW TO MAE IT
Preheat oven to 375 degrees; drizzle olive oil in large skillet over medium heat on stovetop.
Pat the chicken with a paper towel and season with the salt, black pepper, smoked paprika and Italian seasoning.
Transfer chicken to pan when olive oil is heated and cook until crisp on each side.
When the onion and garlic are translucent, pour in the rice and let it toast for a few minutes, stirring frequently; add lemon juice, chicken broth and coconut milk and mix to combine.
Add chopped kale and add up to 1 ½ cups water as needed to wilt down the kale, making sure all of the rice is covered in liquid. transfer to the oven and bake for 15-20 minutes, until rice is fully cooked and the chicken has an internal temp of 165 degrees.
