Cool weather calls for something in the crockpot. Try this easy recipe for barbecue chicken.

Fall doesn’t officially begin until Sept. 22, but admit it, you’re just as ready for cool weather cooking as much as I am.

It’s time to dust off the crockpot and slow cook something delicious and this easy recipe is just what your family wants.

WHAT’S IN IT

· 8 boneless, skinless chicken breasts

· 2 tablespoons chili powder

· 1 teaspoon kosher salt

· 1 teaspoon black pepper

· 1 large onion, sliced

· 8 to 10 garlic cloves

· One 40-oz bottle barbecue sauce

· Soft hamburger buns for serving

HOW TO MAKE IT

Place chicken breasts in slow cooker and generously sprinkle with chili powder, salt and pepper. Add onion, garlic, one cup of barbecue sauce and one cup of water.

Place the lid on the slow cooker and cook on high for 4 hours, stirring once in the middle of the cooking time.

When the time is up, remove the chicken to a cutting board and let cool for a few minutes.

Meanwhile, scoop out all but about 1 cup of the cooking liquid and discard. Save the onions and garlic and keep them in the cooker.

Use two forks to shred the chicken completely.

(Tip: You can shred finely or leave the chicken in large chunks.)

Return the chicken to the slow cooker and pour in the rest of the barbecue sauce.

Stir to combine sauce, chicken, garlic and onions.

Keep warm in the cooker and serve on buns.

For added deliciousness, add pickles and cheese.
