Flavorful meals don’t have to be full of fat; a few simple adjustments and you can enjoy one that’s super tasty and healthy.

JALAPENO POPPER CHICKEN SALAD


20 oz. cooked chicken breasts, diced or shredded


8 slices turkey bacon, cooked and chopped


1/2 cup 2% plain Greek yogurt


1/4 cup chopped pickled jalapenos

1 tbsp. juice from jarred jalapenos


4 ounces light cream cheese, softened


1/4 cup plus 2 tbsp. light mayonnaise


1/4 tsp garlic powder


1/2 tsp Mrs. Dash seasoning


2/3 cup reduced fat sharp cheddar cheese

HOW TO MAKE IT


Combine chicken, yogurt, jalapenos, juice from jalapenos, cream cheese, mayonnaise, garlic powder and seasoning in large bowl; stir until combined.


Gently stir in turkey bacon and cheddar cheese.


Divide into 5 equal portions and serve as a lettuce wrap, stuffed in a cooked sweet bell pepper or with an assortment of fresh veggies

STUFFED PEPPER CASSEROLE


15 oz. cooked lean ground beef (21 oz. raw)


1/4 cup onion, diced


2 tsp. minced garlic


1 1/2 cups green peppers, chopped

1 (14.5 oz) can Rotel


1 cup no sugar added marinara sauce


3/4 cup cauliflower rice


1 tbsp. soy sauce


1/2 teaspoon salt


1/4 teaspoon pepper

1 cup shredded part-skim mozzarella cheese

HOW TO MAKE IT


In large skillet over medium high heat, add ground beef, onion and garlic; cook until browned.


Add the rest of the ingredients except the mozzarella cheese; stir to combine and transfer mixture into a casserole baking dish.


Cover with aluminum foil and bake at 350 degrees for 25 to 30 minutes.


Take out of the oven, sprinkle mozzarella cheese and bake an additional 5 to 10 minutes or until cheese melts. Divide into 4 equal servings.
