Flavorful, low carb cabbage casserole for the win.
I love a new recipe that’s actually good, don’t you?
I try a lot of duds and mediocre dishes I’ll never repeat, but this recipe for a low carb casserole made with cabbage will definitely be added to our dinner rotation.
WHAT YOU NEED
1 lb. ground beef
1 chopped onion
1 orange bell pepper, (seeded, chopped)
3 cloves garlic
14 oz fire roasted diced tomatoes
1/2 tsp paprika
1/2 tsp oregano
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper
1 small head green cabbage, (cored, chopped)
2 cups jack cheese
HOW TO MAKE IT
Sauté onion and pepper using non-stick cooking spray; add ground beef, salt and pepper and cook thoroughly.
Add garlic, tomatoes and spices; mix well.
Top with cabbage, cover and cook 15-20 minutes or until cabbage is tender.
Top with cheese and warm until melted.
A small side salad works great with this recipe.
