For a fresh summer take on tacos, try this recipe made with teriyaki chicken.

Taco Tuesdays just got tastier.

 

Made using fresh veggies, a tangy sauce and peanuts, this recipe for teriyaki chicken tacos is perfect for a summer dinner.

WHAT YOU NEED

 

1 large English cucumber

 

2 tbsp. Ghee or oil

 

1 pound chicken thighs

 

3 tbsp low sodium soy sauce

 

1 tsp ginger

 

2-3 cloves of garlic

 

2 tbsp sweet chili sauce

 

Flour or corn tortillas

 

Shredded cabbage

 

Avocado

 

Crushes peanuts

 


FOR THE SAUCE

 

¼ cup plain Greek yogurt

 

2 tbsp mayonnaise

 

2 tbsp rice vinegar

 

1 tbsp sweet chili sauce

 

1 tsp toasted sesame oil

 

¼ tsp salt

 

1 cup cilantro

 

½ tsp sesame seeds

 


 HOW TO MAKE IT

 

Mix all ingredients for the sauce in small bowl.  

 

Coat chicken thighs with soy, sweet chili, garlic and ginger. 

 

Add Ghee to skillet and heat; brown chicken thighs on both sides and cover until cooked through. 

 


Build tacos by first adding a layer of sauce, sliced cucumber, cabbage, chicken and peanuts.

 

 Top with cilantro. 

 

Serve immediately and enjoy!
