This recipe for marry me chicken soup is made with gnocchi and is absolutely decadent!
It’s the perfect dish for a cozy night in.

WHAT’S IN IT
1-lb. boneless, skinless chicken, diced into one-inch cubes
1 ½ tsp kosher salt
1 tsp dried oregano
¼ black pepper
2 tbsp olive oil
2 tbsp butter
1 medium onion, diced
2 sticks celery, chopped finely
½ cup sun dried tomato
4 cloves garlic
2 tbsp tomato paste
4 cups chicken broth
2 tbsp pesto
16 oz potato gnocchi
½ -1 cup heavy cream
5 oz baby spinach or kale
½ parmesan, grated
1 parmesan rind (optional)
HOW TO MAKE IT
Season chicken with salt, pepper and oregano.
If using uncooked chicken, brown in a skillet with oil and butter. If using rotisserie chicken, still warm thru in the skillet and season.
Add diced onion and celery; cook until translucent.
Add sundried tomatoes, garlic and tomato paste and stir until all combined.
Pour in the broth, pesto and rind, then bring to a boil and simmer for 10-15 minutes.
Add gnocchi to the pot and cook for 3-5 minutes.
Note: The gnocchi with float to the top and be tender.
Add cream, spinach and ½ cup of parmesan and let simmer. Adjust with salt and pepper if needed.
Top with addition grated parmesan and serve with toasted bread.
