High protein, high fiber cottage cheese quiche quesadilla is my new favorite lunch.



 

The Daughter’s wedding day is less than eight weeks away, so I’m serious about getting these last few pounds off.

 

Getting older means the weight loss journey needs to include foods that are high in protein and fiber and low in sugar.

 


This recipe for quiche quesadilla is made with just a few healthy ingredients that I love.

 

One quesadilla packs a whopping 38 grams of protein and 28 grams of fiber and a whole lot of tastiness!

 

HERE’S WHAT YOU NEED

 

Low carb tortilla (I use Mission’s Carb Balance)

 

2 eggs

 


½ cup cottage cheese

 

¼ cup shredded cheese of choice

 

Optional: veggies

 

HOW TO MAKE IT

 

Use one tortilla as your base layer.

 

Place in small round or square pan. (I spritzed a little olive oil on the bottom to keep it from sticking.)

 


Whisk together eggs and cottage cheese and pour mixture on top of tortilla.

 

Top with salt and pepper or seasonings of choice and sprinkle with shredded cheese.

 

You can also add chopped veggies like mushrooms, jalapenos or peppers to the mixture before baking.

 


Bake at 350 degrees for 20 minutes or until lightly golden.

 

Slice with pizza cutter and serve with salsa.
