I got a sneak peek at Stephenville’s new boutique motel, Interstate Inn, and its fabulous new restaurant, The Seeker.
We’ve watched over the past two years as Stephenville’s old Caravan Inn was bull dozed and gutted; a deserted, vacant hole left in its wake.
Then we watched in awe as something new began to take shape - a sleek, modern motel adjoined to a stylish restaurant, breathing new life into the city’s east side.
The Interstate Inn and its new restaurant The Seeker are set to open in January.
On Thursday, Lisa Lennox, who owns the property along with her brother and sister, and general manager Andrea Barr gave me a private tour, and I can tell you without a shadow of a doubt, that’s it’s something Stephenville has never seen.
It's incredible.
BUSTLING WITH ACTIVITY
I pulled up to the motel marked by a big sign advertising The Seeker, which will be run by famed Chef Stephan Pyles.
The property is bustling with activity – from landscapers, contractors and general managers – working together to place the finishing touches in time for its January opening.
I was greeted in the parking lot by Andrea who ushered me to the center of the action where I was stunned to see a gorgeous swimming pool flanked by a double-sided fireplace and jacuzzi.
The landscaped pool deck is surrounded by 33 boutique-style rooms, each one individually designed with a unique color palette and corresponding art.
Lisa has worked closely with Dallas-based Neal Stewart Designs to develop a stunning look with exquisite attention to comfort and detail.
From the lobby’s bold color scheme (think pink wall), expansive glass windows and area for guests to play Mahjong to the restaurant’s carefully-curated menu, stunning bar, outdoor patio and state-of the art kitchen, the Interstate Inn and The Seeker are worth getting excited about.
