I love potato soup, but I hate peeling potatoes, which is why I recently purchased a potato soup starter kit from Venture19 in Stephenville.
For the record, there are a lot of things that I really love at this boutique – jewelry, home décor and candles – but I really enjoy its gourmet food section.
From cocktail mixes to dips, jams, crackers, salad dressings, queso and salsa, there is nothing we haven’t tried that we didn’t love.
So, when I spotted a Soup of Success starter kit for hearty potato soup, I grabbed it ($12.95) and waited for a cold day.
That day arrived Monday when I whipped up a big pot of this deliciousness with a side of cornbread for an easy, delicious meal.
Soup of Success is a company that started in the basement of a church in 1997 with the mission of empowering women and helping them build better lives, so purchasing its delicious soup mix is a win-win.
Along with the starter kit, all you need are a few simple ingredients that are probably already hanging out in your fridge.
· 4 cups of chicken broth
· 1 cup heavy cream
· 1 tbsp. butter
You can, of course, add sausage for a heartier meal, but we topped ours with shredded cheddar cheese and bacon.
It was absolutely delish.
Give this soup some time to simmer so it cooks down and thickens.
Eat it while wearing your favorite pair of pjs and a warm blanket on your lap.
It tastes even better that way.
