Stephenville’s new shining star, the Interstate Inn and its restaurant The Seeker, are set to open “very soon.”
I wish I could give you an exact date when this stunning property will officially open to the public, but all general manager Andrea Barr could tell me last night is that it will happen “in the next couple of weeks.”
Meanwhile, The Husband and I were invited to attend Saturday night’s private preview event, and you guys, get ready to be wowed.
You won’t believe you’re standing on the same property where the old Caravan Inn and Pulido’s once stood; the transformation is astounding.
This new mod motel and its restaurant are nothing short of fabulous.
This is big city stuff, kids, and a game changer for Stephenville.
INTERSTATE INN TREATS GUESTS TO A RESORT-STYLE STAY
The parking lot was packed Saturday when we pulled in with local business owners and city and county officials excited to get their first peek at the finished product.
Outside of the Interstate Inn’s fabulous lobby is a cool vintage convertible greeting the motel’s guests.
And the lobby? Think bold color scheme (pink wall), floor to ceiling windows, area for guests to play Mahjong and comfy seating.
Lisa Lennox owns the property along with her brother and sister. The trio worked closely with Dallas-based Neal Stewart Designs to develop a place with exquisite attention to detail in every nook and cranny.
Each of the 33 rooms are individually designed with a unique color palette, corresponding art by Texas artist Kevin Chupik and luxurious bathrooms that include bathrobes and a coffee station.
(One of the rooms even has a waterbed.)
In the center of the courtyard sits a gorgeous swimming pool, double-sided fireplace and plenty of comfortable seating; giving the boutique property a resort-style feel.
THE SEEKER BY STEPHAN PYLES
There was one common theme among everyone I spoke to Saturday night; they couldn’t believe this place now exists in Stephenville, Texas.
The Seeker restaurant is an airy, vibrant and sophisticated space with lovely table seating and luxurious booths I can’t wait to sink into.
Its menu was carefully-curated by famed chef Stephan Pyles (who is so nice, by the way) and includes dishes like caramelized butternut squash bisque, faux gras mousse, ceviche, honey fried chicken, braised short rib, crab salad, quail and lobster tamale pie.
We tapped into the happy vibes offered at the spacious bar that specializes in unique craft cocktails and fantastic wines.
And if you enjoy dining al fresco as much as we do, you’ll be absolutely thrilled with the outdoor patio.
The Interstate Inn and The Seeker are not just a place to stay when folks come to Stephenville; it’s a place where people come to Stephenville to experience.
