The Husband and I fell in love with this recipe for lasagna soup last season and it’s already on repeat for this fall.
If you love a hearty soup and the taste of creamy lasagna, this spin on the famous pasta dish is for you.
And the best part: It’s super easy to make!
WHAT YOU NEED
1-pound lean ground beef
1 onion, diced
3-5 cloves of garlic
Salt and pepper
Italian seasoning
2 tbsp tomato paste
2 cups marinara (I use Rao’s)
4 cups chicken broth
9-oz box lasagna noodles
½ cup parmesan cheese
1 cup fresh mozzarella
2-3 handfuls baby spinach
HOW TO MAKE IT
Saute onion and garlic in large soup pot; add ground beef and cook thoroughly.
Season with salt, pepper and Italian seasoning.
Add tomato paste, marinara and broth and bring to a light boil.
Break lasagna noodles into bite-size pieces and add to pot, cooking until soft. (You don’t have to use the entire box of noodles.)
Add a couple handfuls of baby spinach, parmesan and mozzarella (give it time to melt) and serve with garlic bread.
*Add additional broth if you like it a little more “soupy.”
