Spice up a boring meal with crispy bang, bang salmon bites and Asian cucumber salad.

This recipe for bang, bang salmon bites served with a side of Asian cucumber salad makes for a delicious dinner the whole family will love.

SALMON BITES

 

1 tbsp avocado oil for cooking

 

1 lb. salmon filet, cut into bite-size chunks

 

½ cup coconut aminos

 

1 tbsp rice vinegar

 

2 cloves garlic

 

1 tsp sriracha

 

2 tsp toasted sesame oil

 

3 cups cooked brown or white rice

 

Broccoli, chopped and roasted

 

1 large ripe avocado

 


FOR THE SAUCE

 

⅓ cup plain Greek yogurt

 

4 tbsp sweet chili sauce

 

2 tsp sriracha

 


ASIAN CUCUMBER SALAD

 

One large English cucumber

 

½ rice vinegar

 

1 tbsp coconut aminos 

 

1 clove of garlic

 

2 tsp pure maple syrup

 



 HOW TO MAKE IT

 

Prepare cucumber salad and let sit for at least 15 minutes; cook rice according to directions.

 

Prepare bang bang sauce and refrigerate.

 

Steam, saute or roast broccoli and season with toasted sesame, salt, pepper and garlic.

 

In a small bowl combine coconut aminos, rice vinegar, garlic, sriracha and sesame oil.

 

Heat avocado oil in skillet over medium/high heat. 

 


Place salmon in skillet (skin side down) and cook for two to three minutes. minutes. Flip and cook an additional one to two minutes.

  

Pour sauce over salmon, gently turning salmon chunks until evenly coated.

 

Drizzle with more sauce and garnish with green onion and sesame seeds.

 

Serve with salad.
