Summer cooking: Fresh, refreshing salmon tacos with mango salsa.

It’s scorching in Texas, which makes cooking a drag.

 

But this recipe for refreshing salmon tacos topped with mango salsa will make your time in the kitchen worth it.

WHAT YOU NEED

 

1 pound salmon

 

1 tbsp olive oil 

 

½ tbsp brown sugar

 

½ tsp paprika, onion powder, garlic powder, salt

 

¼ tsp dried oregano and cayenne pepper

 

2 tbsp butter or ghee

 

cabbage, lime wedges, small soft corn or flour tortillas

 


MANGO SALSA

 

2 mangos

 

¼ cup red onion

 

¼ cup cilantro

 

½ tsp honey

 

Juice of one lime

 

Pinch of salt



CILANTRO LIME DRESSING

 

1 cup fresh cilantro

 

½ avocado

 

Juice of one lime

 

2 tbsp olive oil

 

1 clove garlic

 

½ tsp salt



HOW TO MAKE IT


Pat the salmon dry and cut into 1-inch cubes.


Transfer to a bowl and add olive oil, brown sugar, paprika, onion powder, garlic powder, kosher salt, dried oregano and cayenne pepper; set aside.


To make the salsa, cut mangos into chunks and finely dice red onion and cilantro; add everything to a bowl along with honey, lime juice and kosher salt; stir until combined.


To make the cilantro lime dressing, add all ingredients to a blender or food processor until smooth.


Set skillet over medium heat. Add butter to pan and stir it around as it melts so the whole pan is covered.


Add pieces of salmon to the hot pan, cook for 2-3 minutes then flip.


Continue flipping every minute until cooked through.
