Summers are meant for salads and I’m continuing my series on the very best.
This recipe for chopped Thai is made extra delicious with a creamy peanut sauce and just enough crunch.

WHAT YOU NEED
2 cups romaine lettuce
1 cup cabbage
1 ½ cups purple cabbage
2 cups carrots, shredded
1 red bell pepper, diced
1 cup cucumber, diced
2 green onions
½ cup cilantro, minced
½ cup raw cashews, roughly chopped
THE PEANUT SAUCE
¼ cup peanut butter
1 lime, juiced
3 tbsp soy sauce
3 tbsp sesame oil
2 tbsp maple syrup
Salt and pepper to taste
Pinch of red pepper flakes
HOW TO MAKE IT
Add all the ingredients for the salad into a large bowl and toss to combine.
In small bowl, mix peanut sauce ingredients together until smooth.
Option: Add edamame and rotisserie chicken for additional protein.
