Summer salad series: Flavorful green goddess salad my family loves.

I’m continuing our series on summer salads and this one is made from ingredients from my garden.
This flavorful green goddess salad works well as a side dish and makes the perfect topping for pork tacos!

WHAT YOU NEED
1 small head of cabbage, finely chopped (about 6-8 cups)
3-4 baby cucumbers or 1 large English cucumber, finely chopped
1/4 cup chives, finely chopped
1 bundle green onions/scallions, finely chopped
GREEN GODDESS SALAD DRESSING
Juice of two lemons, about 1/3 cup
1/4 cup olive oil
2 tbsp rice vinegar
1 cup basil leaves
1 cup baby spinach leaves
2 cloves garlic
1 small shallot
1/3 cup nutritional yeast
1 tsp sea salt
1/4 cup nuts of choice (I use cashews or walnuts)
HOW TO MAKE IT
In a food processor or large blender combine all dressing ingredients until creamy.
Combine salad ingredients in a large bowl and pour dressing over salad, then toss.
Cover with plastic wrap and refrigerate or serve immediately!
Serve with tortilla chips or cottage cheese for extra protein.
