If you are a fan of the crockpot, this tasty recipe will make your day.
You probably already have most of the ingredients for this easy dinner inside your pantry.
Putting it together is fast, easy and makes a great weeknight meal your family will love
WHAT’S IN IT
1 lb. ground beef
1 cup chopped onion
1/2 cup green pepper, chopped
1 (16-oz) pinto or kidney beans, rinsed and drained
1 can Rotel
1 small can tomato sauce
1 package dry enchilada seasoning
1/3 cup water
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheese
6 flour tortillas or corn
HOW TO MAKE IT
Brown beef with onion and green pepper, drain.
In bowl, mix all other ingredients except tortillas.
Stir well and add to the meat mixture.
In crockpot, layer 3/4 cup meat mixture, then tortillas. Repeat layers using all six tortillas.
Cover and cook on low for 1-2 hours.
Top worth shredded cheese.
