This easy stuffed pepper skillet makes a tasty meal your family will love.

Everyone loves a single-dish meal and this one for stuffed pepper skillet is delicious!

WHAT’S IN IT


1 lb. cooked lean ground beef


1/4 cup onion, diced


2 tsp. garlic, minced


1 1/2 cups green peppers, chopped


1 can Italian diced tomatoes, drained

1 cup no sugar added marinara sauce


3/4 cup cauliflower rice


1 tbsp. soy sauce


1/2 teaspoon salt


1/4 teaspoon pepper


1 cup shredded part-skim mozzarella cheese

HOW TO MAKE IT


In large skillet over medium-high heat, cook ground beef, onion and garlic.


Add the rest of the ingredients except the mozzarella cheese; stir to combine.

Transfer mixture into a casserole baking dish, cover with aluminum foil and bake at 350 degrees for 35 to 40 minutes.


Take out of the oven, sprinkle mozzarella cheese on top and bake an additional 5 to 10 minutes or until cheese melts.


Makes 4 servings.
