This lasagna soup is so freaking good you won’t believe it! (Even Max loved it!)



The Husband loves lasagna and I love soup, which is why The Daughter shared this recipe with me that she found on TikTok.


“Mom, this is so good!” she said. “I made it for dinner and Max loved it. He even took the leftovers to work, and he never does that with my stuff.”

That “stuff” she was referring to is her cooking and Max is her boyfriend.


The Daughter inherited my wonky cooking gene, which means the stuff we make is usually edible, but rarely is it rave-worthy.


This lasagna soup is rave-worthy and it’s super easy to make!


WHAT YOU NEED


1-pound lean ground beef


1 onion, diced

3-5 cloves of garlic


Salt and pepper


Italian seasoning


2 tbsp tomato paste


2 cups marina (I use Rao’s)


4 cups chicken broth


9-oz box lasagna noodles

½ cup parmesan cheese


1 cup fresh mozzarella


2-3 handfuls baby spinach


HOW TO MAKE IT


Saute onion and garlic in large soup pot; add ground beef and cook thoroughly.

Season with salt, pepper and Italian seasoning.


Add tomato paste, marina and broth and bring to a light boil.


Break lasagna noodles into bite-size pieces and add to pot, cooking until soft.


Add a couple of handfuls of baby spinach, parmesan and mozzarella (give it time to melt) and serve with garlic bread.


This is a pretty thick soup, so add broth if you like it a little more “soupy.”
