This easy recipe brings your favorite Mexican restaurant right to your home!

WHAT YOU NEED
½ tsp olive oil
1 lb. lean ground beef
1 small red bell pepper
1 medium zucchini
6 green onions
1 tsp chili powder
1 tsp cumin
½ tsp garlic powder
½ dried oregano
15 oz canned red enchilada sauce
15 oz can black beans rinsed drained
1 cup frozen corn
8 yellow corn tortillas cut into wedges
1 ½ cup Mexican blend cheese, divided
Optional: Cilantro, sour cream, diced tomatoes or guacamole.
HOW TO MAKE IT
Preheat oven to 425 degrees.
Brown ground beef, add veggies and cook until tender.
Turn off heat and add seasonings, sauce, corn, black beans and ½ cup of cheese.
Gently fold in tortilla pieces until everything is coated with sauce; top with remaining cheese.
Warm in oven for 10-15 minutes.
Garnish as you wish and enjoy!
