This recipe for tropical chicken medley makes the perfect dish on those hard-to-cook nights.

Life gets busy and on those long days when you don’t have time to do a lot of cooking, this recipe for tropical chicken medley is perfect for your family.


It’s tasty and healthy!

WHAT’S IN IT


7 oz raw, boneless, skinless chicken strips


1/2 cup raw broccoli, chopped


1/2 cup red bell pepper, chopped


1/2 cup yellow bell pepper, chopped

2 tbsp Newman's Own Lighten Up Light Lime Vinaigrette


1/2 tsp onion powder


1/4 tsp Mrs. Dash Garlic and Herb Seasoning Blend


Non-stick cooking Spray

HOW TO MAKE IT


Coat chicken strips with vinaigrette and sprinkle with Mrs. Dash seasoning and onion powder; let marinate for 1 to 2 hours.


Spray pan with nonstick cooking spray and saute peppers and broccoli until al dente (tender-crisp).

While cooking peppers, add a little water so they do not burn; set aside.


Add chicken to pan and cook until no longer pink. When chicken is done, combine with peppers and broccoli and mix well.
