Two tasty dishes that will keep your diet on track. (And guess what? They are simple to make.)


Naked burrito and a side salad.

Staying on track takes consistency and it helps to have recipes that are quick and easy to whip up after a busy day.


These two dishes include simple ingredients that most of us have on the ready.


They are family favorites and I bet you will love them as much as we do!

Naked Burrito (makes 2 servings)


WHAT’S IN IT


8 oz. ground beef or turkey


1 tbsp olive oil


1 tsp minced garlic


½ c. chopped green onion


4 eggs + 2 egg whites


1 can Rotel


½ cup fresh cilantro


Homemade taco seasoning or low sodium option

HOW TO MAKE IT

Brown the meat, season with taco seasoning and layer in 8X8 pan.


Top with Rotel and sprinkle with cilantro.


Pour beaten eggs and whites on top and bake at 350 degrees until it sets in the middle.


Serve with a side salad.

Crack slaw (egg roll in a bowl)

WHAT’S IN IT


1 lb. ground turkey or lean ground beef


1 tbsp olive oil


2 tsp minced garlic


3 ½ cup shredded cabbage or broccoli slaw


½ cup chopped green onion


Salt and pepper to taste

SAUCE


½ tsp (one packet) Stevia


½ tbsp ginger (tube or grated fresh)


1 tsp white vinegar

2 tbsp of low sodium soy or Braggs Amino Acids


1 tsp sriracha or Asian chili paste

HOW TO MAKE IT


Brown meat and season with salt and pepper.


Add cabbage, oil, garlic and onion and cook until tender.


Mix sauce in a bowl and pour over mixture, cooking until warmed through and cabbage is tender.
