Winter isn’t over yet.
And nothing warms the heart and soul like a bowl of warm, delicious soup.

1 tbsp olive oil
1 pound sausage – (Italian, polish, chicken or sub in white beans for a no meat option)
1 onion
2 stalks celery
2 carrots
2 cloves of garlic
½ tsp dried thyme
3 tbsp plain flour
3 cups chicken stock
2 bay leaves
½ cup wild rice
3 medium potatoes (peeled and cubed)
1 ½ cup heavy cream or half & half
Salt to taste
HOW TO MAKE IT
Cook sausage in olive oil; remove and add veggies to pan and saute.
Add minced garlic and thyme, cooking for an additional minute.
Make a roux by sprinkling flour over the veggies, stirring for 2-3 minutes.
Return sausage to pot; add stock and rice.
Stir until smooth and add remaining stock.
Cook over medium heat until potatoes are tender.
Finish with cream.
Remove ay leaves and add red pepper flakes for a little heat.
