What should you do with that leftover turkey? Make The Husband’s favorite casserole, of course.



 

I cook an extra-large turkey every year so there’s enough leftovers to make The Husband’s favorite casserole.

 

Four cups. That’s all I need.

 

So before everyone is finished eating, I quietly gather those four cups, place them in a Tupperware and store it in the back of the fridge so no one eats it.

 

Then, a few days later, I whip up the casserole

 

This recipe is a family favorite, but over the years, I have made a few minor adjustments.

 

I hope you enjoy it as much as we do.

 


WHAT YOU NEED

 

4 cups turkey, cut into bite-size pieces

 

2 cups white rice (I use brown)

 

1 can of peas, drained

 

1 can cream of chicken soup

 

Sleeve of Ritz crackers

 

Butter

 


HOW TO MAKE IT (IT’S A CINCH)

 

Grease a mid-size glass baking dish and place cooked rice into the bottom.

 

Layer turkey, peas and soup over the top, spreading evenly.

 

Crush the Ritz crackers and mix them with melted butter (adjust as you like) and sprinkle over the top of casserole.

 

Bake at 350 degrees for about 45 minutes or until heated through.

 

I like to serve this with a side salad and buttered dinner rolls.
