Whole30 approved: A sweet potato stuffed with pesto and chicken is absolutely delish.

HERE’S WHAT YOU NEED

 

1 cup raw walnuts

 

4-5 cloves of garlic

 

3 cups fresh basil

 

2 cups spinach, kale or leafy green

 

⅔ cup of olive oil

 

2 tbsp lemon juice

 


2 tbsp nutritional yeast

 

¾ tsp salt or to taste

 

3 cups shredded chicken

 

6 medium sweet potatoes

 

Coconut oil and salt for baking

 


HOW TO MAKE IT

 

Bake potatoes until soft.

 

While potatoes are in the oven, prepare pesto by combining all pesto ingredients in a blender or food processor. Blend on high and scrape down the sides as needed. 

 

Top baked sweet potato with generous portion of chicken and return to the oven for a few minutes to heat thoroughly.
